Toasted Marshmallow Rice Krispies Treats with Raspberry Dust

toasted rice krispie treats w raspberry dust 2 AJB-1

I don’t have a huge sweet tooth, so I needed to add some dimension to the classic Rice Krispies Treats.  After I mixed the Rice Krispies with the melted marshmallow, I used my Searzall and blowtorch to toast the surface, because Maillard browning reactions make everything better (if you don’t have a blowtorch, try sticking it under your broiler for a minute, but definitely keep an eye on it so it doesn’t burn).  I finished with a generous sprinkling of raspberry dust (i.e., freeze-dried raspberries that I ground in my coffee grinder).  The toasted marshmallow on top works excellently with the gooier variety underneath, and the raspberry dust brings another kind of potent, complex sweetness with a little crunch.
